Ingredients:
- 1 whole chicken, cut into pieces (or left whole if preferred)
- 2 large onions, grated
- 2 garlic cloves, minced
- 1 tsp ground ginger
- 1/2 tsp turmeric
- A pinch of saffron threads
- 1 tsp black pepper
- Salt to taste
- Juice of half a lemon + grated zest
- 1 tbsp chopped cilantro and parsley
- 3 tbsp olive oil
- 1 cup water
- Butter for roasting
Preparation:
1. In a pot, combine the chicken with onions, garlic, spices, saffron, lemon juice and zest, herbs, olive oil, and water.
2. Let it marinate briefly, then cook on low heat until the chicken is tender and the sauce thickens.
3. Remove the chicken from the pot and place it in a baking tray with a bit of butter. Roast in the oven until golden.
4. Pour the remaining sauce over the chicken before serving.
Serve hot with Moroccan bread or steamed rice, and garnish with lemon slices and green olives.
